Diego’s Taco Bar Bids Farewell: Owner Looks to Mobile Operations Amid COVID-19 Challenges and Rising Costs

Kingston Eatery Shutting its Doors After Decade of Service

Diego’s, a popular taco restaurant and bar in Uptown Kingston, recently shut down after ten years of operation. Owner Isaac Cruz took to Instagram to announce the closure, citing the challenges posed by pandemic-era lockdowns and rising costs as the reasons behind the decision.

Cruz mentioned in his announcement that Diego’s was planning to transition to a food truck or trailer in order to keep the spirit of the restaurant alive. The pandemic had dealt a hard blow to the establishment, and despite their best efforts to recover, increasing costs and overhead expenses ultimately forced them to make the difficult decision to close their doors.

Despite its closure, Diego’s loyal customers are encouraged to follow the business on Instagram for updates on future events where they would be vending. Cruz made a plea for support as they worked to sustain the business as a mobile food vending operation, emphasizing the importance of community backing in keeping Diego’s legacy going.
